Ingredients for Safed Murg Korma:
To Marination:
- 500g chicken
- 1/4 tsp freshly ground black pepper
- 2 tsp roasted cumin and coriander powder
- Salt to taste
- 2 tbsp thick curd
- 1 tsp white vinegar (secret ingredient)
For Chawal Maharaj (Flavoured Rice):
- 2 tbsp Healthy Fibres Cow ghee
- 2 bay leaf
- 2 mace
- 1 black cardamom
- 6 cloves
- 5 cardamom pods
- 3 small sticks of cinnamon
- 2 medium-sized chopped onions
- 1 tbsp ginger-garlic paste
- 1 cup Basmati rice
- Water (1:2.5 ratio with rice)
- Salt to taste
For the Safed Murg Gravy:
- 8 pieces Healthy Fibres Whole Cashew (soaked in hot water)
- Healthy Fibres Cold Pressed Coconut oil
- 5 medium-sized chopped onions
- 6 slit green chillies
- 8 garlic pods
- Salt to taste
- 2 tbsp grated coconut
- Healthy Fibres Groundnut oil or coconut oil
- 1 big-sized bay leaf
- 1 black cardamom
- 4 cloves
- 2 green cardamom pods
- 4 small sticks of cinnamon
- Curry leaves
- Finely grated ginger
- Chopped coriander leaves
- Soft paneer (optional)
Instructions:
1. Marinate the chicken by combining black pepper, roasted cumin and coriander powder, salt, thick curd, and white vinegar. Mix well and refrigerate for marination for about 1 hour.
For Chawal Maharaj (flavored rice),
1. Heat Healthy Fibres Cow ghee in a pan and add the bay leaf, mace, black cardamom, cloves, cardamom pods, and cinnamon sticks.
2. Add chopped onions and ginger-garlic paste. Mix well.
3. Add basmati rice and water in a 1:2.5 ratio. Add salt to taste. Alternatively, use a nutripot or rice cooker for cooking.
4. Close the lid and cook the rice until done.
For the Safed Murg Gravy,
1. Soak Healthy Fibres Whole Cashew in hot water and set aside.
2. Heat Healthy Fibres Cold Pressed Coconut oil or Groundnut oil in a pan. Add chopped onions, slit green chilies, garlic pods, and salt. Sauté until the onions turn translucent.
3. Transfer the cooked mixture to a mixer or blender. Add soaked cashew nuts and grated coconut. Grind to a fine paste.
4. Heat Healthy Fibres Groundnut oil or coconut oil in a pan. Add bay leaf, black cardamom, cloves, green cardamom pods, cinnamon sticks, and curry leaves. Let them sizzle.
5. Add the chicken marinade to the pan and fry until cooked well.
6. Add the prepared paste to the pan along with some water for desired consistency. Add finely grated ginger and chopped coriander leaves. Let it cook for some time.
Optionally, add soft paneer to the curry. To make soft paneer, soak cut paneer in hot water and salt for about 20 minutes.
